Chunky Rhubarb/Apple/Strawberry Compote |
Bonshaw Breezes Bed and Breakfast Guests love this PEI holiday favourite.
I prepare this fruit sensation for guests to enjoy on its own or spooned over pancakes or porridge at breakfast. Alternately, it can be savoured as a topping for ice cream or cheesecake at dinners.
Ingredients
Leave the skins on the apples for colour and more fibre or peel them if you prefer.
2 Golden Delicious apples, chopped
1c chopped frozen or fresh rhubarb
1/2c frozen or fresh strawberries
1/4c granulated sugar
2tsp grated orange rind
1/3c orange juice
Method
In saucepan, combine apples and 1 tbsp (15ml) water; cook over medium heat, stirring occasionally, for 5 minutes. Stir in rhubarb, strawberries, sugar and orange rind and juice; bring to boil. Reduce heat and simmer, stirring often, until rhubarb is softened, about 10 minutes. Serve warm or cool. Makes 21/2 cups
